A Single Oatmeal Pancake

Do you love pancakes? Do you also love eating healthish? Then this morning I made up a new recipe this morning I think you're going to love!
It's a single-serve oatmeal pancake. I'll be honest. I didn't measure any of the ingredients as I was adding them, but I have a pretty good idea of how you can recreate this.

The trickiest part will be adding the milk. I just kept pouring until I achieved the consistency I wanted. So pour it slow and stop periodically to stir it into the mix.

Also, usually when I make up pancake recipes, I add egg whites. Well, the egg whites in my refrigerator have expired and I don't ever take risks with expired foods (thanks to a very bad experience with expired ranch dressing when I was a little kid - thanks mom). So that's why there aren't eggs in this recipe. But honestly, it turned out great without them!

Single Oatmeal Pancake Recipe

INGREDIENTS
Oatmeal: 1/2 cup
Flour: 2 tbsp
Baking Powder: 1 tsp
Whole Milk: 3 tbsp

Toppings: syrup, blueberries, chocolate chips...
DIRECTIONS
Mix the oatmeal, flour and baking powder in a bowl. Add in milk until batter sticks together.

Pour batter onto a hot skillet and flip once each side is golden brown. Add toppings and enjoy!

Hi Elle,
I'll be honest with you, I didn't know who you were until today. I mean I've seen you on the WUSA9 from time to time, but I am never awake when you are normally on so only ever see you when you fill in later in the day.
When I looked to see who you were, well that brought me to twitter and I saw your post about these pancakes, which I then continued on to read the rest of your posts (clearly this is a new blog for you, so please keep it up!). I find your style of writing to be very touching and inspirational. So thank you for that.
Ultimately my question comes down to this: you mention in the pancake process of adding milk to the batter until it gets the consistency that you want, while in the recipe it says to add milk until the batter sticks together. So unlike normal pancake mix, is this batter suppose to be almost dough like? or is it still loose...closer to pancake mix? And where is the sugar?!? You mentioned that you consider it a primary food group in your first post ;)

Thanks for writing this blog, and hopefully you are able to answer my questions.
